Low-Fat Loaded Fries

Yields4 Servings

These oven-baked fries use no oil at all and they are crispy and delicious. Perfect when you want to indulge in a healthy way.

For the French Fries
4 Small-Med Size Potatoes (mine were organic)
1 egg white beaten until frothy
1 tsp Salt (add a little white pepper, or chilli powder)
Topping Ideas
 Shredded Cheese
 Avocado
 Shredded Lettuce
 Chopped Tomato
 Greek Yoghurt or Sour Cream
 Jalepenos
 Spring Onion
For the Fries
1

Slice potato lengthwise (skin on) into wedges. Thickness will depend on your preference.

2

Toss wedges with the frothy egg white until evenly coated.

3

Lay evenly on a cookie sheet lined with baking paper. Sprinkle with salt.

4

Bake at 220C/ 435F for about 35 minutes. The one thing to keep in mind is that these need to be cooked on high heat- timing is a fine art and it depends on the thickness of your taters. It took me a few attempts to get these juuuust right.

5

Once the potatoes are cooked through, transfer to a baking dish and add cheese.

6

Broil/ Grill for 2-5 minutes until gold and bubbly. Remove from oven and add your toppings.

7

Top with smashed avocado with lime juice, shredded lettuce, herbs, tomatoes and finally top with Greek Yoghurt and sprinkle with cumin.
